Ingredients

Chicken and Seasoning

  • 1 tbsp olive oil
  • 1 lb chicken cutlets (4 cutlets, or 2 chicken breasts sliced in half lengthwise)
  • 1/4 tsp salt & pepper, plus extra for seasoning
  • 1 tbsp butter
  • 4 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes

Sauce and Garnish

  • 1/2 cup heavy cream
  • 1 cup parmesan cheese
  • 1 cup basil, roughly chopped plus extra for garnish

Vegetables

  • 1 head broccoli, chopped into florets

Instructions

  1. Prepare and sear the chicken: Heat olive oil in a skillet over medium-high heat. Season the chicken cutlets with salt and pepper. Add them to the skillet and sear each side for 3-4 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.
  2. Steam the broccoli: Place broccoli florets in a large bowl filled with water and microwave on high for 7-8 minutes until tender but still crisp. Drain the water thoroughly and set the broccoli aside.
  3. Make the creamy basil sauce: Add butter to the same skillet and melt over medium heat. Add minced garlic and sun-dried tomatoes, sautéing for 30 seconds until fragrant. Pour in the heavy cream and bring it to a gentle boil. Stir in the parmesan cheese along with a pinch of salt and pepper to season. Add the roughly chopped basil leaves and cook for another 30 seconds until the basil is wilted and the sauce thickens slightly.
