A rich and creamy creamed spinach recipe that combines tender spinach with a luscious blend of cream cheese, parmesan, and aromatic seasonings. Perfect as a comforting side dish for any meal, ready in just 15 minutes.

Ingredients

Spinach

  • 20 oz. baby spinach

Dairy and fats

  • 2 tbsp. butter
  • 1/2 cup milk
  • 1/4 cup heavy cream
  • 4 oz. cream cheese
  • 1/4 cup freshly grated Parmesan

Aromatics and seasoning

  • 1/2 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Pinch cayenne pepper

Instructions

  1. Blanch Spinach: Bring a large pot of salted water to a boil. Add baby spinach and cook for 30 seconds just until wilted. Quickly drain the spinach and transfer it to a bowl of ice water to stop cooking. When cool, drain thoroughly and squeeze out excess water.
  2. Sauté Aromatics: In a large skillet over medium heat, melt the butter. Add the finely chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Create Cream Sauce: Pour in the milk, heavy cream, and cream cheese to the skillet. Simmer gently until the cream cheese is fully melted and the sauce is smooth. Season with kosher salt, freshly ground black pepper, and a pinch of cayenne pepper to taste.
  4. Combine and Finish: Add the drained spinach and freshly grated Parmesan cheese to the skillet. Stir well to combine all ingredients evenly. Cook for 1 to 2 minutes to meld the flavors before serving.

Notes

  • Be sure to squeeze out as much water as possible from the spinach after blanching to avoid watery creamed spinach.
  • Use fresh Parmesan for best flavor and texture.
  • This dish can be prepared ahead and gently reheated on the stovetop.
  • For a lighter version, substitute half-and-half for heavy cream and cream cheese.
