Ingredients

Soup Base

  • 3 Tablespoons butter (Substitute olive oil or coconut oil)
  • 3 Tablespoons flour
  • 1/2 cup chicken broth
  • 1/2 cup whole milk (Substitute heavy cream or half and half)
  • 1/4 teaspoon salt
  • Dash of pepper

Potatoes

  • 1/2 cup cooked potatoes (Diced)

Instructions

  1. Melt Butter: In a large pot over medium-high heat, melt the butter or your chosen substitute fat until fully melted and hot.
  2. Warm Potatoes: Add the cooked, diced potatoes to the pot and cook them until they are thoroughly warmed through, stirring occasionally.
  3. Create Roux: Stir in the flour, whisking constantly to form a thick paste. Keep stirring carefully to prevent the butter from browning or burning.
  4. Add Broth: Slowly pour in the chicken broth while whisking continuously to keep the mixture smooth and free of lumps.
  5. Add Milk and Simmer: Pour in the milk or cream, then reduce the heat to medium-low and allow the soup to simmer gently for a couple of minutes. Do not let it boil. Add additional liquid if the soup seems too thick, keeping in mind it will thicken more as it cools.
  6. Season Soup: Once the soup reaches your desired thickness and warmth, reduce the heat and season it evenly with salt and a dash of pepper.
