  • 15.25 oz. whole kernel sweet corn (drained)
  • 1 small red bell pepper (diced)
  • 1 jalapeno pepper (minced)
  • 1/3 cup fresh cilantro (finely chopped)
  • ¾ cup diced red onion
  • 2 avocados (diced)

Dressing Ingredients

  • ¼ cup lime juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon honey
  • ¼ teaspoon chili powder

Instructions

  1. Prepare the Dressing: In a small bowl, combine lime juice, red wine vinegar, salt, black pepper, honey, and chili powder. Whisk until well blended and set aside to allow the flavors to meld.
  2. Combine Dip Ingredients: In a large bowl, add drained and rinsed black beans, drained sweet corn, diced red bell pepper, minced jalapeno, chopped cilantro, diced red onion, and diced avocados. Gently toss to combine all the ingredients evenly without mashing the avocados.
  3. Add Dressing to Dip: Pour the prepared dressing over the vegetable and bean mixture. Toss gently to coat all ingredients thoroughly with the dressing for an even flavor distribution.
  4. Serve or Store: Serve the cowboy caviar immediately as a dip with chips or as a salad topping. Alternatively, refrigerate the dip until ready to serve; it can be prepared up to one day in advance.
  5. Freshen Before Serving: If prepared in advance, just before serving, toss the dip with an additional tablespoon of lime juice to brighten the flavors. For optimal freshness, you may also choose to add freshly diced avocado right before serving to maintain its texture and color.
