4.2 from 1 review

These Coconut Lime Popsicles are a refreshing tropical treat, combining creamy full-fat coconut milk with zesty lime for a perfect balance of creamy and tangy flavors. Sweetened naturally with maple syrup and a hint of salt to enhance the flavor, these popsicles are easy to make and ideal for hot days or a light dessert.

Ingredients

Ingredients

  • 14 ounces full-fat coconut milk, canned
  • 1 teaspoon lime zest (about 1 lime)
  • 3 tablespoons freshly squeezed lime juice
  • 1/3 cup maple syrup (sub agave nectar if preferred)
  • 1/4 teaspoon salt (optional)

Instructions

  1. Blend Ingredients: Place all ingredients in a blender and blend for about 10 seconds until smooth. Avoid blending too long to preserve texture. For larger flecks of lime zest in your popsicles, add zest after blending and pulse 1-2 times. Alternatively, whisk the mixture well using a utensil with a pour spout for easy transfer.
  2. Pour and Freeze: Pour the blended mixture into a 6-piece popsicle mold, leaving about 1/4 inch of space at the top for expansion. Insert the sticks, then place the molds in the freezer. Freeze for 4 to 6 hours until fully solid.

Notes

  • You can substitute maple syrup with agave nectar for a different natural sweetener.
  • Using canned full-fat coconut milk ensures a creamy texture and rich flavor.
  • Do not overblend to maintain a nice texture in the popsicles.
  • Leave a little room in the mold to allow the liquid to expand as it freezes.
  • These popsicles are best served directly from the freezer; let them sit a couple of minutes at room temperature if they are too hard to remove.
