This Classic Chocolate Fudge recipe yields rich, creamy, and perfectly smooth fudge with a deep chocolate flavor. Made by cooking a simple mixture of sugar, evaporated milk, butter, and chocolate chips on the stovetop, then poured into a pan to set, this timeless treat is perfect for special occasions or anytime you want a sweet, indulgent dessert.

Ingredients

Fudge Ingredients

  • 3 ½ cups (665g) granulated sugar
  • 1 (12 oz) can evaporated milk
  • 6 tablespoons (85g) salted butter
  • ¼ teaspoon kosher salt
  • 3 ½ cups (595g) semi-sweet chocolate chips
  • 1 tablespoon (30ml) vanilla extract

Instructions

  1. Prepare Pan: Grease a 9×9-inch baking dish with nonstick spray and line it with parchment paper extending up all sides. This will prevent sticking and make it easier to remove the fudge once set.
  2. Cook Sugar Mixture: In a large saucepan over medium-high heat, combine the evaporated milk, butter, and granulated sugar. Bring to a boil, stirring frequently to avoid scorching the mixture. Once boiling, continue to boil and stir constantly for 4 minutes to properly cook the sugar and thicken the mixture.
  3. Add Chocolate and Flavorings: Remove the pan from heat and let it stand for 1 minute. Then add the semi-sweet chocolate chips, kosher salt, and vanilla extract. Stir vigorously until the chocolate chips are completely melted and the mixture is smooth and glossy.
  4. Set the Fudge: Pour the chocolate mixture into the prepared baking dish. Use a silicone spatula to smooth the top evenly. Let the fudge set at room temperature until firm, about 2 to 4 hours.
  5. Cut and Serve: Once fully set, lift the fudge out of the pan using the parchment paper. Cut into small squares and serve immediately or store in an airtight container.

Notes

  • Use a heavy-bottomed saucepan to prevent burning during boiling.
  • Stir constantly once boiling to ensure even cooking and to avoid burning the fudge.
  • Allow fudge to set fully at room temperature; refrigeration can cause it to be too hard.
  • Store fudge in an airtight container at room temperature for up to 1 week.
  • For a richer flavor, use high-quality semi-sweet chocolate chips.
