Ingredients

Main Ingredients

  • 1/2 cup unsalted butter (8 tablespoons), softened
  • 2/3 cup granulated sugar
  • 2 large eggs, room temperature
  • 3 medium/large very ripe bananas (about 1 3/4 cups mashed)
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips (divided: 3/4 cup and 1/4 cup, or mini chocolate chips or chunks)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Butter and flour a standard loaf pan measuring approximately 9.25 inches long by 5.25 inches wide and 2.75 inches deep to prevent sticking.
  2. Cream Butter and Sugar: In a mixing bowl fitted with a paddle attachment, cream together the softened butter and granulated sugar until light and fluffy. Then, add the lightly beaten eggs and mix thoroughly to combine.
  3. Add Bananas and Vanilla: Mash the ripe bananas with a fork until they reach a chunky applesauce consistency. Add the mashed bananas and vanilla extract to the mixing bowl, stirring until well blended.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt to evenly distribute the leavening and seasonings.
  5. Combine Wet and Dry: Gradually add the dry ingredients into the wet ingredients bowl, mixing just until incorporated to avoid overmixing which can toughen the bread.
  6. Fold in Chocolate Chips: Gently fold in 3/4 cup of the semisweet chocolate chips into the batter ensuring even distribution without deflating the mixture.
  7. Transfer to Pan and Top: Pour the batter into the prepared loaf pan. Sprinkle the remaining 1/4 cup of chocolate chips evenly over the top for extra chocolate appeal.
  8. Bake the Bread: Bake the banana bread in the preheated oven for 55 to 65 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs but no wet batter.
  9. Cool Before Serving: Allow the loaf to rest in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely before slicing to maintain its tender texture.

Notes

  • Ensure bananas are very ripe for the sweetest and most flavorful bread.
  • Do not overmix the batter once the dry ingredients are added to prevent dense bread.
  • If using mini chocolate chips or chocolate chunks, the chocolate distribution and melting may slightly vary.
  • You can substitute part of the all-purpose flour with whole wheat flour for a nuttier flavor but this may affect texture.
  • Store banana bread wrapped at room temperature for up to 3 days or refrigerate for up to a week.
