This Chicken Foil Packet Meal is a quick and easy recipe featuring tender boneless chicken breasts cooked with fresh vegetables in foil packets. The meals retain moisture and flavor while baking, resulting in a delicious, healthy, and mess-free dinner perfect for busy weeknights. Seasoned with fresh thyme and pepper, these foil packets lock in all the natural flavors, and serve with optional lemon wedges for a bright finishing touch.

Ingredients

Chicken and Vegetables

  • 4 boneless skinless chicken breast halves (4 ounces each)
  • 1/2 pound sliced fresh mushrooms
  • 1 1/2 cups fresh baby carrots
  • 1 cup pearl onions
  • 1/2 cup julienned sweet red pepper

Seasonings

  • 1/4 teaspoon pepper
  • 3 teaspoons minced fresh thyme
  • 1/2 teaspoon salt (optional)

Garnish (Optional)

  • Lemon wedges

Instructions

  1. Preheat oven and prepare chicken: Preheat your oven to 375°F (190°C). Flatten each chicken breast to about 1/2-inch thickness to ensure even cooking.
  2. Assemble the foil packets: Lay each flattened chicken breast in the center of a 12-inch square of heavy-duty foil. Layer the sliced mushrooms, baby carrots, pearl onions, and julienned sweet red pepper evenly over each chicken breast.
  3. Season the ingredients: Sprinkle each packet with 1/4 teaspoon of pepper, 3 teaspoons of minced fresh thyme, and optionally 1/2 teaspoon of salt to taste.
  4. Seal the packets: Fold the foil around the chicken and vegetables securely, sealing the packets tightly to trap steam and flavors while baking.
  5. Bake the packets: Place the sealed packets on a baking sheet and bake in the preheated oven for about 20 minutes, or until the chicken juices run clear indicating the chicken is fully cooked.
  6. Serve: Carefully open the foil packets to avoid steam burns and serve the meals warm. Optionally, squeeze lemon wedges over the chicken and vegetables for added brightness.

Notes

  • Use heavy-duty aluminum foil to prevent tearing and leaking during baking.
  • Make sure chicken breasts are flattened evenly to promote even cooking and prevent dryness.
  • Feel free to customize vegetables based on availability or personal preference.
  • Cooking times may vary slightly depending on oven and thickness of chicken; always check chicken is cooked through.
  • Leftover foil packet meals can be stored in the refrigerator for up to 2 days; reheat thoroughly before eating.
