Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste

Sandwich Components

  • 1 avocado, sliced
  • 4 slices cheese (Swiss, cheddar, or provolone)
  • 4 slices bread (sourdough, ciabatta, or choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

Instructions

  1. Prepare the Chicken:Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until cooked through and no longer pink inside. Remove from skillet and let rest for a few minutes before slicing thinly.
  2. Prepare the Avocado and Cheese:Slice the avocado and set aside with the cheese slices.
  3. Prepare the Bread:Spread mayonnaise and Dijon mustard evenly on each slice of bread.
  4. Assemble the Sandwiches:On two slices of bread, layer sliced chicken, avocado, cheese, red onion, and tomato. Top with remaining bread slices, mayo side down.
  5. Grill the Sandwiches:Heat a skillet or grill pan over medium heat and add butter or olive oil. Place sandwiches in pan and cook until bread is golden and cheese melts, about 3-4 minutes per side. Press gently with spatula to help cheese melt evenly.
