Chex Scotcheroo Clusters are a delightful no-bake treat combining crunchy corn Chex cereal with a sweet, creamy mixture of corn syrup, peanut butter, and sugar, all topped with a luscious blend of melted chocolate and butterscotch chips. These clusters are perfect for parties, snacks, or anytime you crave a quick and easy sweet bite.

Ingredients

Cluster Mixture

  • 1 cup corn syrup
  • 1 cup peanut butter (creamy or crunchy)
  • 1/2 cup white sugar
  • 6 cups corn Chex cereal (or any variety)

Topping

  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips

Instructions

  1. Prepare the mixture: Combine corn syrup, peanut butter, and sugar in a medium saucepan over medium heat. Stir continuously until the mixture is melted, smooth, and easily pourable without bringing it to a simmer.
  2. Coat the cereal: Pour the warm mixture over the corn Chex cereal in a large bowl. Stir thoroughly to ensure all cereal pieces are evenly coated.
  3. Form clusters: Using a medium cookie scoop (about 2 tablespoons), scoop the coated cereal mixture into clusters and place them carefully onto parchment or wax paper-lined baking sheets.
  4. Cool the clusters: Allow the clusters to cool and set at room temperature until firm enough to handle.
  5. Melt the toppings: In a double boiler or microwave, melt the semisweet chocolate chips and butterscotch chips together. If using a microwave, heat in 30-second intervals, stirring in between, then additional 15-20 second bursts if needed until smooth and creamy. Avoid overheating the chocolate to prevent burning.
  6. Decorate clusters: Spoon the melted chocolate and butterscotch mixture over the cooled clusters evenly.
  7. Set the topping: Let the clusters stand at room temperature until the chocolate topping hardens fully before serving or storing.
