A delightful Cherry Cobbler infused with warm cinnamon and rich vanilla flavors, featuring juicy fresh sweet cherries topped with a tender, buttery batter. This classic dessert combines a fragrant spiced fruit filling with a golden baked crust, perfect for cozy gatherings or a comforting treat, best served warm with a scoop of vanilla ice cream.

Ingredients

Fruit Mixture

  • 2 tablespoons honey (warm)
  • 2 teaspoons vanilla extract (divided)
  • ½ teaspoon almond extract
  • 1 teaspoon cinnamon (divided)
  • 4 cups fresh sweet cherries (about 1 pound, pitted)

Butter

  • 6 tablespoons unsalted butter or coconut oil (cut into individual tablespoons)

Batter

  • 1 cup all purpose flour or gluten free 1-to-1 baking flour
  • ⅔ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup whole milk, 2% milk, or plant milk

Optional Serving

  • Vanilla ice cream (for serving)

Instructions

  1. Preheat the oven: Set your oven to 350 degrees Fahrenheit to prepare for baking the cobbler.
  2. Prepare the cherry mixture: In a medium bowl, stir together warm honey, 1 teaspoon vanilla extract, almond extract, and ½ teaspoon cinnamon until smooth. Add the pitted cherries and toss gently to coat evenly. Set aside to marinate briefly.
  3. Melt the butter: Place the tablespoons of unsalted butter or coconut oil in a 9-inch pie pan, then put the pan in the preheating oven to melt the butter evenly as the oven heats.
  4. Make the batter: In another medium bowl, combine flour, granulated sugar, baking powder, remaining ½ teaspoon cinnamon, and salt. Stir until evenly blended. Add the milk and remaining 1 teaspoon of vanilla extract, mixing until you have a smooth, lump-free batter.
  5. Assemble the cobbler: Remove the pie pan with melted butter from the oven. Pour the cherry mixture into the pan, spreading it evenly. Then pour the batter gently over the cherries, covering them completely.
  6. Bake: Place the pan back in the oven and bake for 45 to 55 minutes or until the top is golden brown and a toothpick inserted in the batter comes out with only a few moist crumbs or cherry bits. If the top browns too quickly, cover loosely with aluminum foil to prevent burning.
  7. Cool and serve: Remove the cobbler from the oven and transfer to a wire rack. Allow to cool for about 10 minutes, which helps the flavors settle and the cobbler to firm up slightly. Serve warm, optionally topped with vanilla ice cream for an extra indulgence.

Notes

  • Use fresh, ripe sweet cherries for the best flavor; if unavailable, frozen cherries can be thawed and drained before using.
  • You can substitute unsalted butter with coconut oil for a dairy-free version.
  • If the cobbler top browns too fast, tent with foil to avoid burning while finishing baking inside.
  • Vanilla ice cream adds a creamy, cool contrast that complements the warm spiced cherries beautifully but is optional.
  • This recipe can easily be made gluten-free by using a 1-to-1 gluten-free baking flour blend.
  • Allow the cobbler to rest for a few minutes before serving to let the juices thicken slightly.
