Ingredients

Meat & Vegetables

  • 2 lb lean ground beef (90/10 or 93/7 fat content)
  • 1/2 large yellow onion (finely diced)

Seasonings & Condiments

  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 cup mayonnaise

Dairy & Cheese

  • 8 slices medium cheddar cheese
  • 6 oz medium cheddar, shredded (or additional sliced cheese)
  • 2 Tbsp unsalted butter (melted, plus more for greasing)

Bakery

  • 24 dinner rolls (or 2 packs of 12 rolls)

Others

  • 1/2 Tbsp olive oil
  • 1 Tbsp sesame seeds

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 350˚F. Generously butter the bottom of a rimmed baking sheet to prevent sticking and add flavor to the buns.
  2. Cook Onions and Ground Beef: Heat a large skillet over medium-high heat and add 1/2 tablespoon olive oil. Add the finely diced onion and the 2 pounds of ground beef. Break up the beef with a spatula. Season with 1 teaspoon salt, 1 teaspoon black pepper, and 1 teaspoon garlic powder. Continue to sauté over medium-high heat until the meat is cooked through, breaking it up into smaller pieces as it cooks. Remove the skillet from the heat.
  3. Drain Fat and Add Mayonnaise: Tilt the skillet to spoon off and discard any excess fat from the cooked beef. Stir in 1/4 cup of mayonnaise thoroughly to give the meat a creamy texture and added moisture.
  4. Assemble the Sliders: Cut the dinner rolls in half horizontally. Arrange the bottom halves on the buttered baking sheet. Place one slice of cheddar cheese over each bottom bun half. Evenly spread the beef mixture over the cheese, using the back of a spatula to square the edges for neatness. Sprinkle 6 ounces of shredded cheddar cheese evenly over the beef layer.
  5. Add the Tops and Butter: Place the top halves of the buns, cut side down, uniformly over the cheese-covered beef. Brush the tops with 2 tablespoons of melted butter and immediately sprinkle with 1 tablespoon sesame seeds for a golden, flavorful finish.
  6. Bake to Melt and Brown: Bake the assembled sliders at 350˚F for 12 to 15 minutes until the cheese is melted and the tops are golden brown. Remove from oven and serve warm.

Notes

  • Use lean ground beef (90/10 or 93/7) to reduce excess grease while maintaining juiciness.
  • Mayonnaise adds moisture and helps bind the beef filling for a creamy texture.
  • Butter the baking sheet well to prevent the rolls from sticking and add a rich flavor to the bottoms.
  • Toast the buns slightly if you prefer a crisper sandwich texture before assembling.
  • Feel free to add pickles, ketchup, or mustard after baking for added flavor.
  • These sliders freeze well assembled before baking; just thaw and bake as directed.
