Ingredients

Sauce

  • ¼ cup mayonnaise
  • 2 tablespoons ketchup
  • 3 tablespoons finely chopped dill pickles

Beef Mixture

  • 1 tablespoon cooking oil
  • ⅓ cup finely chopped yellow onion
  • 1 lb ground beef
  • Salt and pepper, to taste
  • 3 tablespoons ketchup
  • 2 teaspoons yellow mustard
  • ½ cup finely chopped dill pickles

Quesadillas

  • 8 oz mild shredded cheddar cheese
  • 68 (8-inch) flour tortillas
  • Oil or butter (about ½ teaspoon per cooking batch) for cooking

Instructions

  1. Prepare the sauce: Combine mayonnaise, 2 tablespoons ketchup, and 3 tablespoons finely chopped dill pickles in a bowl. Stir well, cover, and refrigerate to allow the flavors to meld while you prepare the quesadillas.
  2. Cook the onions: Heat 1 tablespoon cooking oil in a medium skillet over medium heat until shimmering. Add the finely chopped yellow onion and cook, stirring occasionally, until softened and translucent.
  3. Cook the ground beef: Add 1 lb ground beef to the skillet with the onions. Season with salt and pepper. Cook while crumbling the meat until fully browned, about 6-8 minutes. Drain excess grease thoroughly to keep tortillas from becoming soggy.
  4. Add condiments: Stir in 3 tablespoons ketchup and 2 teaspoons yellow mustard into the cooked beef mixture until well incorporated.
  5. Finish beef mixture: Stir in ½ cup finely chopped dill pickles, then remove the skillet from heat.
  6. Assemble quesadillas: Lay a flour tortilla flat on a work surface. Sprinkle one half with about 2 tablespoons shredded cheddar cheese. Top with approximately ⅓ cup beef mixture, then sprinkle another 2 tablespoons cheese on top. Fold the uncovered half of the tortilla over the filling to form a half-moon shape.
  7. Preheat skillet for cooking: Heat a clean 10-inch (or larger) skillet over medium to medium-high heat. Add about ½ teaspoon oil or butter and spread evenly over the skillet surface.
  8. Cook quesadillas: Place the assembled quesadilla gently into the hot skillet. Press down lightly and cook until the bottom is golden brown and crispy, about 3-4 minutes. Carefully flip and cook the other side until cheese is melted and tortilla is golden brown, about another 3 minutes.
