Ingredients

Dough

  • 3 1/3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup shortening, butter-flavored
  • 12 tablespoons cold water

Apple Filling

  • 2/3 cup sugar
  • 1/3 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 3 1/2 pounds granny smith apples, peeled, cored, and cut into 1/4-inch-thick slices (10 cups)

Crumb Topping

  • 1 cup rolled oats, quick-cooking
  • 1 cup brown sugar, packed
  • 1/2 cup all-purpose flour
  • 1/2 cup butter

Homemade Caramel

  • 1 cup brown sugar
  • 4 tablespoons butter
  • 1/2 cup half-and-half
  • 1 tablespoon vanilla
  • Pinch salt

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 375 degrees Fahrenheit. Spray a 15x10x1 inch pan with nonstick cooking spray and set aside.
  2. Make the Dough: In a large bowl, combine the flour and salt. Using a pastry blender, cut in the shortening until the mixture resembles coarse crumbs. Gradually add the cold water, starting with four tablespoons, stirring with a fork and then adding remaining tablespoons one at a time until moistened. Shape the dough into a ball with your hands.
  3. Roll and Chill Dough: On a lightly floured surface, roll the dough out into a 19×13-inch rectangle. Wrap it around the rolling pin and unroll it into the prepared pan. Press the dough gently into the pan and up the sides without stretching. Trim to 1/2 inch beyond pan edges, fold over and flute the edges. Refrigerate while preparing the filling.
  4. Prepare Apple Filling: In an extra-large bowl, toss the sugar, flour, cinnamon, and sliced apples together until apples are evenly coated. Spread the apple mixture evenly over the chilled dough crust.
  5. Make Crumb Topping: In a large bowl, combine rolled oats, brown sugar, and flour. Cut in butter with a pastry blender until the topping has a coarse crumb texture. Sprinkle the crumb topping evenly over the apples.
  6. Bake the Pie: Bake the pie for 40-45 minutes or until the apples are tender and topping is crisp. If the topping begins to brown too fast, cover the pie loosely with foil for the last 5-10 minutes. Remove from the oven and let cool slightly.
  7. Prepare Caramel Sauce: In a medium saucepan over medium-low to medium heat, combine brown sugar, butter, half-and-half, vanilla, and a pinch of salt. Whisk constantly for 5 to 7 minutes until the sauce thickens into caramel. Remove from heat.
  8. Serve: Drizzle the warm caramel sauce over the slightly cooled pie or allow the caramel to cool and thicken in the fridge before serving.

Notes

  • Use granny smith apples for a tart contrast to the sweet caramel and crumb topping.
  • Chilling the dough before baking helps maintain a flaky crust.
  • If topping browns too quickly, cover with foil to prevent burning.
  • Caramel can be stored in the refrigerator and reheated gently before drizzling.
  • This recipe serves 24, making it ideal for gatherings and potlucks.
