  • 16 ounces mini marshmallows (a 16 ounce bag)
  • 1 teaspoon vanilla extract
  • 6 cups crispy rice cereal
  • 1 cup candy corn candy

Instructions

  1. Prepare Baking Dish: Begin by preparing a 9×13-inch baking dish or sheet pan with cooking spray or line it with parchment paper to ensure easy cleanup. Set aside.
  2. Melt Butter and Marshmallows: In a large pot over medium-low heat, add the 4 1/2 tablespoons of salted butter and stir continuously until melted. Add the entire 16 ounces of mini marshmallows and continue stirring until the marshmallows are completely melted and the mixture is smooth.
  3. Add Vanilla and Cereal: Stir in 1 teaspoon of vanilla extract for flavor then remove the pot from heat. Immediately add the 6 cups of crispy rice cereal and stir until evenly combined.
  4. Incorporate Candy Corn: During the last few seconds of mixing, fold in 1 cup of candy corn to distribute them evenly throughout the mixture without melting them.
  5. Press into Pan and Set: Transfer the sticky mixture into the prepared pan and use a spatula or your hands (lightly buttered) to press it evenly and firmly. Allow the treats to set at room temperature for about 1 hour until firm.
  6. Cut and Serve: Once set, cut into desired shapes or squares and serve immediately. Enjoy the festive and sweet snack!
  7. Storage: Store any leftovers in an airtight container at room temperature for up to 3 days. These treats do not require refrigeration.
