A creamy, low-carb twist on classic Alfredo pasta using tender green cabbage strips as noodles, cooked in a rich Parmesan and garlic cream sauce for a delicious and comforting meal in just 20 minutes.

Ingredients

Vegetables

  • 1 head Green Cabbage (Sliced into long strips like noodles)

Dairy & Fats

  • 2 tbsp Butter (Unsalted)
  • 1 cup Heavy Cream (Room temperature is best)
  • 1 cup Parmesan Cheese (Grated)

Seasonings

  • 2 cloves Garlic (Minced)
  • 1/2 tsp Salt (To taste)
  • 1/2 tsp Black Pepper (To taste)

Instructions

  1. Prepare the cabbage: Cut the cabbage head into long, thin strips so they resemble pasta noodles, setting the foundation for a noodle-free Alfredo dish.
  2. Melt the butter: Heat 2 tablespoons of unsalted butter in a large skillet over medium heat until fully melted and shimmering, preparing the pan for sautéing.
  3. Sauté garlic: Add the minced garlic cloves to the butter and cook for about one minute until fragrant but not browned, infusing the butter with garlic flavor.
  4. Cook the cabbage: Add the cabbage strips to the skillet and cook for about 5 minutes, stirring occasionally, until the cabbage softens and becomes tender like al dente pasta.
  5. Add heavy cream: Pour in 1 cup of room temperature heavy cream and allow it to gently bubble, combining with the cabbage and cooking juices.
  6. Incorporate cheese and seasonings: Stir in 1 cup of grated Parmesan cheese, 1/2 teaspoon salt, and 1/2 teaspoon black pepper, adjusting seasoning to taste.
  7. Thicken the sauce: Continue stirring the mixture until the Parmesan cheese is fully melted and the sauce thickens into a creamy, luscious consistency that coats the cabbage noodles.
  8. Serve immediately: Dish out the cabbage Alfredo while warm to enjoy at its creamiest and most flavorful.

Notes

  • For extra flavor, you can add a pinch of nutmeg to the Alfredo sauce.
  • Use fresh Parmesan cheese for best melting and flavor results.
  • Room temperature cream helps the sauce thicken more smoothly.
  • Serve with a sprinkle of fresh parsley or extra Parmesan for garnish if desired.
  • This recipe is a great low-carb alternative to traditional pasta Alfredo dishes.
