Butternut Squash Waffles

  • 1 ½ cups cooked pureed butternut squash
  • 2 cups almond milk
  • ¾ cup coconut oil
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 2 tablespoon maple syrup
  • 1 ½ cups whole wheat flour
  • ½ cup buckwheat flour
  • 1 tablespoon baking powder
  • ¼ teaspoon kosher salt
  • 1 ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg

Maple Yogurt Topping

  • 3 tablespoon plain Greek yogurt
  • 1 tablespoon maple syrup

Instructions

  1. Prepare the batter: In a large mixing bowl, combine the cooked pureed butternut squash, almond milk, melted coconut oil, eggs, pure vanilla extract, and maple syrup. Mix well until smooth.
  2. Mix dry ingredients: In a separate large bowl, whisk together the whole wheat flour, buckwheat flour, baking powder, kosher salt, ground cinnamon, ground ginger, ground cloves, and ground nutmeg until evenly distributed.
  3. Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and stir gently until just incorporated; avoid overmixing to keep the waffles tender.
  4. Preheat the waffle maker: Heat your waffle maker until hot according to the manufacturer’s instructions to ensure crispy waffles.
  5. Cook the waffles: Spoon about ¾ cup of batter onto the hot waffle iron. If using a flip-style waffle maker, cook for 1 ½ minutes, then carefully flip and cook for an additional 1 ½ minutes, or until the waffle is golden-brown on both sides. If it does not flip, cook for about 2-3 minutes until golden and cooked through.
  6. Make the maple yogurt topping: While waffles cook, mix together plain Greek yogurt and maple syrup in a small bowl until smooth and well combined.
  7. Serve: Top cooked waffles with the maple yogurt topping and optionally sprinkle a little ground cinnamon for extra flavor. Serve warm.
