A flavorful and hearty Buffalo Chicken Casserole with tender potatoes, spicy buffalo sauce-coated chicken, crispy turkey bacon, and melted sharp cheddar cheese. Perfect for a family dinner, this baked dish combines comfort and spice in one satisfying meal.

Ingredients

Potatoes

  • 2 pounds potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Chicken

  • 1 pound chicken breast, cut into 1-inch pieces
  • 1/2 cup buffalo sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Toppings

  • 1/2 cup sharp cheddar cheese
  • 1/2 cup cooked turkey bacon
  • Scallions, for garnish (optional)

Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Season Potatoes: In a large bowl, toss the peeled and cubed potatoes with olive oil, garlic powder, paprika, oregano, salt, and black pepper until they are evenly coated with the seasoning mixture.
  3. Bake Potatoes: Spread the seasoned potatoes evenly in the prepared baking dish. Bake for 30 minutes, stirring halfway through the cooking time to ensure even browning and tenderness.
  4. Prepare Buffalo Chicken: While the potatoes are baking, place the chicken breast pieces in a separate bowl. Toss them with buffalo sauce, salt, and black pepper to coat the chicken thoroughly.
  5. Add Chicken to Potatoes and Bake: Once the potatoes are tender and lightly browned, remove the baking dish from the oven. Scatter the buffalo sauce-coated chicken evenly over the potatoes. Return the casserole to the oven and bake for an additional 20 minutes, or until the chicken is fully cooked.
  6. Add Cheese and Bacon: After the chicken is cooked, sprinkle the sharp cheddar cheese and cooked turkey bacon evenly over the top of the casserole. Bake for another 5 minutes to melt the cheese.
  7. Rest and Garnish: Remove the casserole from the oven and let it rest for 5 minutes. Garnish with chopped scallions if desired, then serve warm.

Notes

  • You can substitute sweet potatoes or a mix of potatoes for a different flavor.
  • Adjust the amount of buffalo sauce to your preferred spice level.
  • For a vegetarian version, replace chicken and turkey bacon with plant-based alternatives.
  • Make sure to cut potatoes evenly to ensure uniform cooking.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven.
