A flavorful and healthy grilled Bruschetta Chicken recipe featuring tender chicken breasts marinated in lemon and Italian herbs, topped with fresh tomato basil bruschetta and melted mozzarella cheese. Perfect for a light yet satisfying meal with vibrant Mediterranean flavors.

Ingredients

Marinade and Chicken

  • 4 tbsp extra-virgin olive oil
  • 1 lemon, juiced, divided
  • Kosher salt, to taste (about 1 tsp for marinade plus seasoning)
  • Freshly ground black pepper, to taste (about 1/4 tsp for marinade plus seasoning)
  • 1 tsp Italian seasoning or dried oregano
  • 4 boneless skinless antibiotic-free chicken breasts, pounded to even thickness

Tomato Topping

  • 3 slicing tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tbsp freshly chopped basil
  • Kosher salt and freshly ground black pepper, to taste

Finishing

  • 4 slices mozzarella cheese
  • Freshly grated Parmesan cheese, for serving

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together the extra-virgin olive oil, half of the lemon juice, kosher salt (about 1 teaspoon), freshly ground black pepper (about 1/4 teaspoon), and Italian seasoning or dried oregano until well combined. Transfer this marinade into a large resealable bag along with the chicken breasts. Seal the bag, ensuring the chicken is well coated, and refrigerate for 30 minutes to infuse flavors.
  2. Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken breasts from the marinade, discarding any excess liquid. Place the chicken on the grill and cook for approximately 5 to 7 minutes on each side, until the chicken is charred and cooked through to an internal temperature of 155° to 160°F, ensuring it is safe and juicy.
  3. Prepare the Bruschetta Topping: While the chicken is grilling, in a bowl combine the chopped tomatoes, minced garlic, freshly chopped basil, the remaining lemon juice, and season with kosher salt and freshly ground black pepper to taste. Stir gently to mix the flavors without bruising the tomatoes.
  4. Melt the Mozzarella: When the chicken is almost done, place one slice of mozzarella on top of each chicken breast while still on the grill. Cover the grill or chicken with a lid to help melt the cheese. This should take about 2 to 3 minutes.
  5. Serve: Once the cheese has melted, remove the chicken from the grill. Spoon the fresh tomato and basil bruschetta mixture generously over each chicken breast. Garnish with freshly grated Parmesan cheese and serve immediately for a delicious and vibrant meal.

Notes

  • For best results, use fresh, ripe tomatoes and fresh basil to enhance the bruschetta topping’s flavor.
  • Ensure chicken breasts are pounded to even thickness for uniform cooking.
  • Feel free to serve with a side salad or crusty bread for a complete Mediterranean-inspired meal.
  • You can substitute mozzarella slices with fresh mozzarella balls cut into slices if preferred.
  • Monitor chicken’s internal temperature closely to avoid dryness; remove from grill at 160°F internal temp.
