Ingredients

Sausage and Tortilla Base

  • 1 pound chicken sausage
  • 8 (4 to 6 inch) flour tortillas
  • 1 tablespoon butter

Egg Filling

  • 5 large eggs, beaten with 1 tablespoon water

Toppings

  • 1 cup shredded Cheddar cheese
  • 1 avocado, sliced
  • 3 green onions, sliced
  • Hot sauce to taste
  • Everything bagel seasoning

Instructions

  1. Prepare the sausage spread: Evenly spread a layer of chicken sausage over each flour tortilla, reaching the edges. Set the prepared tortillas aside for griddling.
  2. Cook the scrambled eggs: Melt the butter in a nonstick skillet over medium heat. Add the beaten eggs, season with salt and pepper, and cook, stirring frequently until just set but still moist. Remove from heat and keep warm.
  3. Griddle the tortillas: Heat a griddle or large skillet over medium-high heat. Place the tortillas sausage side down on the hot surface, working in batches if necessary to avoid overcrowding. Cook undisturbed for about 4 minutes until browned and cooked through. Flip the tortillas and cook for an additional 30 seconds to 1 minute.
  4. Assemble the tacos: Fold each tortilla in half to form a taco. Evenly distribute the scrambled eggs on top of each taco, followed by a sprinkle of shredded Cheddar cheese, sliced avocado, and green onions.
  5. Add finishing touches: Drizzle with hot sauce according to your preferred spice level and sprinkle with everything bagel seasoning for an extra burst of flavor. Serve immediately and enjoy your breakfast smashed tacos.

Notes

  • Use chicken sausage for a leaner, flavorful protein option.
  • Make sure not to overcook the eggs; they should be creamy and soft for the best texture inside the tacos.
  • If you prefer, substitute flour tortillas with corn tortillas for a gluten-free alternative, but ensure they are sturdy enough to hold the fillings.
  • Adjust hot sauce amount based on your heat tolerance.
  • Everything bagel seasoning adds a savory finish but can be omitted if unavailable.
