Ingredients

Biscuit Topping

  • 1.5 cups all purpose flour
  • 3 tablespoons sugar
  • 1.5 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 6 tablespoons chilled unsalted butter, grated
  • ½ cup sour cream plus 1 extra tablespoon

Blueberry Filling

  • 3 tablespoons all purpose flour
  • 1 cup sugar
  • 6 cups fresh blueberries
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon finely grated lemon zest

For Serving

  • Vanilla ice cream

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to prepare for baking the cobbler.
  2. Make the Biscuit Topping: In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the grated chilled butter and use your fingertips to blend it until small pea-sized lumps remain. Stir in the sour cream and gently knead until a soft dough forms. Set aside.
  3. Prepare the Blueberry Filling: In another large bowl, combine the flour and sugar, then add fresh blueberries, lemon juice, and lemon zest. Toss gently until the berries are evenly coated in the mixture. Transfer this blueberry filling to a medium oven-safe skillet or baking dish.
  4. Assemble the Cobbler: Tear the biscuit dough into small pieces and scatter them evenly over the blueberry filling, leaving some spots uncovered to allow bubbling.
  5. Bake: Place the skillet in the preheated oven and bake for 45 to 50 minutes, or until the blueberry filling is bubbling and the biscuit topping is golden brown and cooked through.
  6. Cool: Remove from oven and let the cobbler cool for at least 1 hour to set and enhance flavors.
  7. Serve: Spoon the cobbler into bowls or plates and top each serving with scoops of vanilla ice cream for a creamy, cool contrast.

Notes

  • The biscuit dough is delicious on its own and tempting to eat straight from the skillet.
  • For a richer biscuit flavor, try substituting sour cream with crème fraîche.
