Ingredients

Shrimp and Seasoning

  • 1 pound peeled and deveined shrimp
  • 1 tablespoon Cajun blackening seasoning
  • 1/2 teaspoon salt

  • 1 tablespoon olive oil

Vegetables and Wrap

  • 1 small cucumber
  • 1 medium tomato
  • 1 head romaine lettuce
  • 4 large tortilla shells

Dressing and Cheese

  • 1/2 cup creamy Caesar dressing
  • 1 tablespoon shredded Parmesan cheese

Instructions

  1. Prepare Vegetables: Dice the tomato and cucumber into 1/2-inch pieces and cut the romaine lettuce into 1 to 1 1/2-inch pieces. Set all aside for assembly.
  2. Season Shrimp: Rinse the shrimp and pat dry. Place them in a medium bowl, then add Cajun seasoning, salt, and cayenne pepper. Toss to coat evenly.
  3. Preheat Griddle: Heat your griddle to medium heat. Pour and evenly spread olive oil on the griddle surface to prevent sticking and to help cook the shrimp properly.
  4. Cook Shrimp: Place the seasoned shrimp on the griddle and cook for 1 1/2 to 2 minutes until they develop a blackened crust. Flip and cook the other side for another 1 1/2 to 2 minutes until shrimp are opaque and cooked through.
  5. Let Shrimp Cool & Warm Tortillas: Remove shrimp from the griddle and let them cool for 10 minutes. While cooling, briefly heat the tortillas on the griddle to soften and warm them for wrapping.
  6. Combine Salad Ingredients: In a large bowl, mix the cooled shrimp with lettuce, cucumber, and tomato. Drizzle Caesar dressing over the mix and toss gently to combine flavors.
  7. Assemble Wraps: Lay a warmed tortilla flat and place a portion of the shrimp salad center on it. Sprinkle shredded Parmesan cheese on top.
  8. Wrap & Serve: Carefully fold the tortilla around the filling, ensuring ingredients are secure within. Slice the wrap diagonally at a 45-degree angle and serve immediately.
