Ingredients

Dough

Filling

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 6 tablespoons salted butter, at room temperature (for spreading)

Icing

  • 4 tablespoons salted butter
  • 6 ounces cream cheese, at room temperature
  • 23 cups powdered sugar
  • 12 tablespoons hazelnut liqueur (optional)
  • 2 teaspoons vanilla extract
  • Pinch of salt

Instructions

  1. Mix the Dough: In the bowl of a stand mixer, combine the flour, instant yeast, 1 tablespoon brown sugar, and salt. Add the warm milk, eggs, and 6 tablespoons of room temperature salted butter. Using the dough hook attachment, mix until the flour is fully incorporated, about 4-5 minutes. If the dough feels sticky, add additional flour 1/4 cup at a time. Cover the bowl with plastic wrap and let rest at room temperature for 15 minutes up to 1 hour to start proofing.
  2. Prepare the Filling: In a separate bowl, combine 1/2 cup brown sugar, 1/4 cup granulated sugar, and 2 tablespoons ground cinnamon. Butter a 9×13 inch baking dish or a similar-sized round pan to prevent sticking.
  3. Shape the Rolls: Punch down the risen dough and roll it out on a lightly floured surface into a 12 x 18 inch rectangle.
