Ingredients

Dry Ingredients

  • 2 cups all-purpose (or plain) flour
  • 1/4 cup granulated sugar (or sweetener)
  • 4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 3/4 cups milk
  • 1/4 cup butter, melted and slightly cooled
  • 2 teaspoons pure vanilla extract
  • 1 large egg

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the flour, sugar (or sweetener), baking powder, baking soda, and salt. Make a well in the center to prepare for the wet ingredients.
  2. Combine Wet Ingredients: Add the milk, slightly cooled melted butter, vanilla extract, and the egg into the well. Use a wire whisk to whisk the wet ingredients together first.
  3. Blend Wet and Dry: Slowly fold the wet ingredients into the dry ingredients, mixing until smooth. A few small lumps are okay. The batter should be thick and creamy. If it’s too thick to pour smoothly, fold in an additional tablespoon or two of milk gradually until desired consistency is reached.
  4. Rest the Batter: Set the batter aside to rest while you heat your pan or griddle. This helps the ingredients combine and improves the pancake texture.
  5. Heat Pan and Prepare: Heat a nonstick pan or griddle over low to medium heat. Wipe it with a little butter to lightly grease the surface.
  6. Cook Pancakes: Pour 1/4 cup of batter onto the pan, spreading gently into a round shape using the back of a ladle or measuring cup. When the underside is golden and bubbles start to form on the surface, flip the pancake with a spatula and cook until golden on the other side.
  7. Repeat and Serve: Continue with the remaining batter, cooking pancakes in batches. Serve warm with honey, maple syrup, fresh fruit, ice cream, or frozen yogurt, or enjoy them plain.

Notes

  • Do not overmix the batter; it’s fine to have a few small lumps to keep pancakes fluffy.
  • Resting the batter allows the flour to hydrate fully, giving lighter pancakes.
  • Adjust milk quantity to get the perfect pouring consistency for the batter.
  • Use low to medium heat to ensure pancakes cook through without burning.
  • Butter the pan lightly before each batch to prevent sticking and add flavor.
  • These pancakes freeze well—just reheat in a toaster or microwave for a quick breakfast.
