Ingredients

Beef and Seasonings

  • 3 pounds boneless beef chuck, cut into 1-inch cubes
  • Salt and pepper to taste

Vegetables

  • 5 medium carrots, sliced
  • 1 pound baby potatoes
  • 1 small white onion, diced
  • 3 cloves garlic, minced
  • 2 cups frozen peas

Liquids and Flavorings

  • 3 cups beef broth
  • ½ cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • ¼ cup all-purpose flour

Garnish

  • Fresh chopped parsley

Instructions

  1. Season and Brown Beef: Season the beef chuck cubes with salt and pepper. Heat a large skillet over medium-high heat and brown the beef on all sides for 2-3 minutes to seal in flavor. Then transfer the beef to the slow cooker.
  2. Add Vegetables: Add the sliced carrots, baby potatoes, diced onion, and minced garlic to the slow cooker with the beef.
  3. Add Liquids and Seasonings: Pour in the beef broth, tomato paste, Worcestershire sauce, and Italian seasoning. Season with additional salt and pepper to taste. Stir to combine.
  4. Slow Cook: Cook the stew on LOW for 8-10 hours or on HIGH for 6-8 hours, until both the beef and vegetables are tender and flavorful.
  5. Thicken the Stew: About one hour before serving, remove 1 cup of the stew liquid and whisk it with the all-purpose flour to create a slurry. Stir this mixture back into the stew along with the frozen peas. Allow the stew to cook further until it thickens.
  6. Garnish and Serve: Once thickened and heated through, serve the stew garnished with fresh chopped parsley for added freshness and color.

Notes

  • For best texture, brown the beef before slow cooking to enhance flavor.
  • The stew can be prepared the night before; flavors improve after resting.
  • Adjust seasoning to taste before serving.
  • Use baby potatoes to ensure they cook fully in the slow cooker without falling apart.
  • Frozen peas are added at the end to maintain their texture and color.
