Perfect for a wholesome fall meal, it balances warm roasted vegetables with crisp fruit and herbaceous notes, making it a versatile salad that can be enjoyed warm or chilled.

Ingredients

Grain

  • 1 cup freekeh or other grain (quinoa, bulgur, etc.)

Roasted Vegetables

  • 1 head cauliflower, chopped into small florets
  • 2 sweet potatoes, peeled and chopped
  • 1 tablespoon olive oil
  • A sprinkle of dried spices (thyme, rosemary, or your choice) or a few sprigs of fresh thyme or rosemary
  • Salt and pepper to taste

Salad and Dressing

  • 1 large apple, chopped
  • 1 bunch parsley (about 1 cup), minced
  • 1 small clove garlic, minced
  • 2/3 cup olive oil
  • Juice of one lemon (more to taste)
  • 1 teaspoon agave syrup (optional)
  • 1/2 teaspoon salt
  • Pepper to taste

Instructions

  1. Cook the Grain: Rinse the freekeh or your chosen grain thoroughly. Place it in a rice cooker with the correct amount of water or broth as per the grain’s package instructions. Use the white rice setting to cook. While the grain cooks, you can prepare the roasted vegetables and dressing.
  2. Roast the Vegetables: Preheat your oven to 425°F (220°C). Chop the cauliflower into small florets and peel and chop the sweet potatoes. Spread them on a baking sheet, drizzle with 1 tablespoon olive oil, sprinkle with salt, pepper, and your choice of dried spices or fresh herb sprigs like thyme or rosemary. Roast for 20 minutes, then stir the vegetables and roast for another 10-15 minutes until golden brown and tender. Remove from oven and set aside.
  3. Prepare the Dressing: In a jar with a tight-fitting lid, combine 2/3 cup olive oil, lemon juice from one lemon, minced garlic, minced parsley, 1/2 teaspoon salt, pepper to taste, and 1 teaspoon agave syrup if using. Shake well until fully emulsified.
  4. Assemble the Salad: When the grain and vegetables are done, combine them in a large bowl. Add the chopped apple and toss everything together. Pour the lemon dressing over the salad and mix well. The salad can be served warm or cooled to room temperature; note that the texture will be heavier when warm.
  5. Store Leftovers: For best freshness, store the salad and dressing separately and combine just before serving.

Notes

  • This salad can be made with other grains such as quinoa or bulgur if freekeh is unavailable.
  • Adjust lemon juice and salt according to taste for desired acidity and seasoning.
  • Agave syrup is optional and adds a subtle sweetness to balance the dressing’s tartness.
  • Serve warm for a comforting dish or chilled for a refreshing salad.
  • Leftover salad and dressing should be stored separately to maintain freshness and texture.
  • Roasting vegetables until golden brown enhances their natural sweetness and flavor depth.
