These Apple Turnovers are a delightful treat featuring tender, spiced Granny Smith apples wrapped in flaky puff pastry and topped with a sweet vanilla glaze. Perfectly golden and crisp on the outside with a soft, caramelized apple filling inside, these turnovers make an irresistible dessert or snack.

Ingredients

Filling

  • 2 cups small-diced Granny Smith apples (about 2 apples, peeled, cored, and cut into small dice)
  • 2 tablespoons unsalted butter
  • 2 tablespoons light brown sugar
  • 1 teaspoon apple pie spice

Pastry

  • 2 sheets frozen puff pastry (thawed according to package directions)

Egg Wash

  • 1 large egg
  • 1 tablespoon water

Icing

  • ⅔ cup powdered sugar
  • 1 tablespoon milk
  • ¼ teaspoon vanilla extract

Instructions

  1. Cook the Apple Filling: Melt the butter in a skillet over medium heat. Add the diced apples and cook for 2-3 minutes, then stir in the brown sugar and apple pie spice. Continue cooking for another 3-4 minutes until the apples soften and the syrup thickens, creating a sticky and flavorful filling.
  2. Cool the Filling: Transfer the cooked apple mixture into a bowl and let it cool completely. If preparing ahead, cover and refrigerate the filling until ready to assemble.
  3. Prepare Oven and Baking Sheet: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and facilitate easy cleanup.
  4. Handle Puff Pastry: Work with one sheet of thawed puff pastry at a time, keeping the other refrigerated to maintain its cool temperature and prevent it from becoming too soft.
  5. Shape the Dough: Unfold each puff pastry sheet onto a floured surface. Gently pinch the seams together using a rolling pin to form a smooth square. If the dough softens too much, chill it briefly to keep it firm and workable.
  6. Assemble the Turnovers: Cut each puff pastry sheet into 4 equal squares. Place a portion of the cooled apple filling in the center of each square. Brush two edges of each square with an egg wash made by whisking the egg with water. Fold the dough diagonally to form triangles, pressing edges firmly and crimping with a fork to seal. Place the assembled turnovers on the lined baking sheet.
  7. Finish and Bake: Cut a small slit on top of each turnover to allow steam to escape. Brush the tops with additional egg wash for a golden finish. Bake in the preheated oven for 20 minutes or until puffed and golden brown.
  8. Prepare Icing and Serve: Let the turnovers cool for about 10 minutes. Meanwhile, whisk together powdered sugar, milk, and vanilla extract to form a smooth icing. Drizzle the icing over the warm turnovers and serve immediately.

Notes

  • Ensure the apple filling is completely cooled before assembling to prevent soggy pastry.
  • Keep the puff pastry cold during handling to maintain flakiness.
  • The small slit in the turnovers allows steam to escape, preventing puff pastry from bursting.
  • Serve turnovers warm for the best flavor and texture.
  • Store leftovers in an airtight container and reheat gently before serving.
