This easy and delicious Air Fryer Zucchini Casserole is a perfect side dish that combines layers of fresh zucchini, melted parmesan cheese, and a creamy garlic sauce, all cooked quickly in your air fryer. With minimal prep and a rich flavor, it’s a healthy and satisfying addition to any meal.

Ingredients

Vegetables

  • 3 zucchinis, sliced into rounds

Cheese

  • 1 cup parmesan cheese

Sauce

  • ¼ cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • Salt to taste

Instructions

  1. Slice Zucchinis: Begin by slicing the zucchinis into even rounds to create uniform layers for the casserole.
  2. Layer Zucchinis and Cheese: In a small casserole dish that fits inside your air fryer, arrange a layer of zucchini slices overlapping in rows. Sprinkle one-third of the parmesan cheese evenly over this layer. Repeat with a second layer of zucchini and another one-third of the cheese. Add the final layer of zucchini slices and top with the remaining parmesan cheese.
  3. Prepare Creamy Garlic Sauce: In a saucepan over medium heat, combine the heavy cream, butter, and minced garlic. Stir the mixture until the butter melts completely and the sauce begins to bubble, then remove from heat.
  4. Pour Sauce over Casserole: Carefully pour the hot creamy garlic sauce evenly over the layered zucchini and cheese in the casserole dish.
  5. Air Fry the Casserole: Place the casserole dish in your preheated air fryer and cook at 375°F (190°C) for 18 minutes until the zucchini is tender and the cheese is melted and browned on top.

Notes

  • Make sure your casserole dish fits inside your air fryer basket before starting.
  • You can adjust the amount of garlic to taste for a milder or stronger flavor.
  • For a lighter variation, substitute heavy cream with half-and-half or a dairy-free alternative.
  • Let the casserole cool for a few minutes before serving to allow it to set slightly.
  • This recipe can be doubled if your air fryer is large enough to accommodate a bigger dish.
