Ingredients

Shrimp and Vegetables

  • 1 pound (450g) raw shrimp, thawed
  • 3 small mixed bell peppers, sliced
  • 1 small yellow onion, sliced

Seasonings and Oil

  • 1 tablespoon vegetable oil, divided
  • 1 tablespoon fajita seasoning, divided

  • 4 tortillas
  • Pico de gallo
  • 1 avocado, sliced
  • Lime crema

Instructions

  1. Preheat the air fryer: Set your air fryer to 375°F (190°C) and let it preheat for 5 minutes to ensure even cooking.
  2. Season the vegetables: In a bowl, toss the sliced bell peppers and onion with half of the vegetable oil and half of the fajita seasoning until evenly coated. Place the vegetables in the air fryer basket.
  3. Air fry vegetables: Cook the vegetables in the air fryer for 3 minutes at 375°F, allowing them to soften and start to caramelize.
  4. Prepare the shrimp: While the vegetables cook, season the shrimp with the remaining oil and fajita seasoning, ensuring each piece is well coated.
  5. Add shrimp to air fryer: After the vegetables have cooked for 3 minutes, use a spatula to push them to one side of the basket. Add the shrimp to the empty side of the basket.
