Ingredients

Fritters

  • 2 small pineapples (or 2 cans pineapple rings)
  • 2 large eggs
  • 2 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup coconut flour
  • 1 cup sweetened coconut flakes

Optional Toppings

  • Vanilla ice cream
  • Caramel sauce

Instructions

  1. Preheat Air Fryer: Preheat your air fryer to 310°F (154°C) for about 5 minutes to ensure it’s ready for cooking the fritters evenly.
  2. Prepare Pineapple: If using fresh pineapple, slice it into rings and carefully remove the core from each ring to create a perfect base for frying.
  3. Mix Dry Ingredients: In a medium bowl, whisk together the coconut flour, brown sugar, ground cinnamon, nutmeg, and salt to create the spiced dry coating for the pineapple.
  4. Beat Eggs: In a separate bowl, lightly beat the two large eggs which will help the coatings adhere to the pineapple rings.
  5. Prepare Coconut Flakes: Pour the sweetened coconut flakes into another bowl, ready to coat the pineapple after dipping in the batter.
  6. Dry Pineapple Rings: Pat the pineapple rings dry with paper towels to remove excess moisture, which helps the coatings stick better.
  7. First Egg Dip: Dip each pineapple ring into the beaten egg, letting any excess drip off to avoid clumping.
  8. Dry Coating: Coat the egg-dipped pineapple rings thoroughly in the coconut flour mixture to form the first layer of the batter.
  9. Second Egg Dip: Dip the coated pineapple rings back into the beaten eggs to prepare for the final coconut flakes layer.
  10. Coconut Flake Coating: Press the pineapple rings into the sweetened coconut flakes bowl ensuring both sides are well covered so the flakes stick firmly.
  11. Prepare Air Fryer: Spray the inside of the air fryer basket with propellant-free coconut oil spray to prevent sticking and promote even browning.
  12. Air Fry Fritters: Place the coated pineapple rings in the air fryer basket and cook at 310°F (154°C) for 15-17 minutes, flipping halfway through to ensure golden-brown crispiness on both sides.
  13. Serve: Once golden and crispy, remove the pineapple fritters from the air fryer. Serve warm, optionally topped with vanilla ice cream and drizzled caramel sauce for an indulgent dessert experience.

Notes

  • Use canned pineapple rings for convenience, but fresh pineapple offers better texture and flavor.
  • Patting dry the pineapple is crucial to help the coatings stick properly.
  • Flipping the fritters halfway ensures even cooking and browning on both sides.
  • For a dairy-free option, use vegan ice cream and caramel syrup.
  • Adjust cooking time slightly depending on your air fryer model for perfect crispness.
