Indulge in the deliciousness of this Zero Carb Yogurt Bread that perfectly fits a low-carb or keto lifestyle. With a moist texture and a hint of richness from full-fat Greek yogurt, this bread will satisfy your cravings without the guilt.

Ingredients

Wet Ingredients:

  • 6 large eggs
  • ½ cup full-fat Greek yogurt (unsweetened, plain)
  • 1 tablespoon baking powder (aluminum-free preferred)
  • ¼ cup melted butter or coconut oil

Dry Ingredients:

  • ¼ teaspoon salt
  • ½ teaspoon xanthan gum or psyllium husk powder (for texture and structure)
  • Optional: ½ cup finely ground almond flour (adds structure without raising carbs significantly)

Instructions

  1. Step 1: Preheat and Prep the Pan – Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or grease well.
  2. Step 2: Whisk the Wet Ingredients – In a large bowl, whisk eggs, yogurt, and melted butter until smooth.
  3. Step 3: Add the Dry Ingredients – Mix in baking powder, salt, and xanthan gum or psyllium husk powder. Add almond flour if using.
  4. Step 4: Pour and Smooth the Batter – Pour batter into the pan and smooth the top.
  5. Step 5: Bake – Bake for 35–45 minutes until golden and a toothpick comes out clean.
  6. Step 6: Cool Completely – Cool in pan for 10 minutes, then transfer to a wire rack to cool before slicing.

Notes

  • Use full-fat, unsweetened Greek yogurt for best results
  • Let bread cool completely before slicing
  • Optional almond flour adds structure but can be skipped for strict zero carb
  • Refrigerate leftovers and toast before serving for best texture
  • Customize with herbs, seeds, or spices for different flavor profiles
