Ingredients

For the Treats

  • 6 cups (210g) Lucky Charms cereal
  • 1/4 cup (4 Tbsp; 56g) unsalted butter
  • 10-ounce (283g) bag marshmallows (mini size or regular)
  • Optional: pinch of salt

For the White Chocolate Coating

  • Two 4-ounce bars (226g total) quality white chocolate, coarsely chopped (or use almond bark)

Instructions

  1. Prepare the Pan: Line a 9-inch square baking pan with parchment paper, leaving enough overhang on the sides to lift out the bars easily. Lightly grease the parchment paper with nonstick spray to prevent sticking, then set the pan aside.
  2. Melt Butter and Marshmallows: In a very large pot, melt the unsalted butter over medium heat. Once melted, add the marshmallows and a pinch of salt if using. Stir continuously until the marshmallows are completely melted and smooth. Remove the pot from heat.
  3. Mix in Cereal: Fold the Lucky Charms cereal into the melted marshmallow mixture carefully, ensuring every piece is well coated without crushing the cereal.
  4. Press into Pan: Transfer the cereal and marshmallow mixture into the prepared pan. Lightly grease the back of a flat spatula with nonstick spray and gently press the mixture down evenly. Avoid pressing too hard to keep the bars light and chewy.
  5. Set the Treats: Allow the treats to set at room temperature for at least 2 hours, or up to a full day if covered tightly.
  6. Cut the Bars: Use the parchment paper overhang to lift the set treats out of the pan. Cut into 16 square bars and place them onto a baking sheet lined with parchment paper or a silicone mat.
  7. Melt White Chocolate: Melt the chopped white chocolate in a double boiler on the stove or microwave it in 20-second increments, stirring after each until smooth and fully melted.
  8. Dip Treats in Chocolate: Holding each treat, dip the bottom generously into the melted white chocolate, then place them white chocolate side up on the prepared baking sheet. Let the chocolate set at room temperature for about 1 hour or refrigerate for 20 minutes to speed up the process.
  9. Store Leftovers: Cover and store any leftover treats in an airtight container at room temperature for up to 3 days. To prevent sticking, place parchment or wax paper sheets between layers.
