Ingredients
Juice of 1 lime (about 2 tablespoons)
Zest of 1 lime
1 tablespoon honey
¼ cup fresh mint leaves, thinly sliced
5 cups cubed seedless watermelon
1½ cups strawberries, hulled and halved
1 cup blueberries
1 cup blackberries
1 cup raspberries
Fresh mint leaves, thinly sliced, for garnish
Instructions
In a small bowl, whisk together the lime juice, lime zest, honey, and thinly sliced mint leaves to create the dressing. Set aside.
In a large mixing bowl, combine the cubed watermelon, halved strawberries, blueberries, blackberries, and raspberries.
Pour the prepared dressing over the fruit mixture and gently toss to coat all the fruit evenly.
Transfer the salad to a serving bowl and garnish with additional thinly sliced mint leaves before serving.
