This Vanilla Mug Cake is a quick and easy single-serving dessert that can be whipped up in just 5 minutes. Perfectly moist with a subtle vanilla flavor and a fun burst of sprinkles, it’s an ideal treat for when you crave something sweet but don’t want to bake a whole cake. Prepared directly in a mug and cooked in the microwave, this recipe delivers a delicious homemade cake experience with minimal effort and cleanup.

Ingredients

Dry Ingredients

  • ¼ cup + 1 1/2 teaspoons all-purpose flour (35 g)
  • 2 tablespoons sugar (25 g)
  • 1/4 teaspoon baking powder (1 g)
  • Dash of salt

Wet Ingredients

  • 2 tablespoons butter, melted (28 g)
  • 3 tablespoons milk (45 ml)
  • 1/2 teaspoon vanilla extract (2.5 ml)

Toppings

  • 1 teaspoon sprinkles (4 g)

Instructions

  1. Combine Dry Ingredients: Add the all-purpose flour, sugar, baking powder, and a dash of salt into a microwave-safe mug. Stir them together thoroughly to ensure even distribution of the leavening agent and salt.
  2. Mix Wet Ingredients: Pour in the melted butter, milk, and vanilla extract into the mug. Stir continuously until the batter becomes smooth, making sure to scrape the bottom of the mug to incorporate all the flour originally stuck there. Then, gently fold in the sprinkles for a colorful touch.
  3. Microwave to Cook: Place the mug in the microwave and cook for 70 to 90 seconds. Look for the cake to be just set but still slightly shiny on top to avoid overcooking and a dry texture.
  4. Rest and Serve: Allow the mug cake to rest inside the microwave for 1 minute after cooking to complete the setting process before eating. Enjoy directly from the mug or transfer to a plate if preferred.

Notes

  • Cooking times may vary based on microwave wattage; start checking at 70 seconds.
  • Use a microwave-safe mug to avoid accidents.
  • You can substitute milk with any plant-based milk for a dairy-free version.
  • Butter can be replaced with oil to keep the cake moist if preferred.
  • For a stronger vanilla flavor, increase vanilla extract up to 1 teaspoon.
  • Add chocolate chips or nuts instead of sprinkles for variety.
