Ingredients

Tomato Mixture

  • 2 medium tomatoes

Instructions

  1. Prepare the Tomatoes: Cut an “X” on the bottom of each tomato, just deep enough to pierce the skin. This scoring will help in peeling the tomatoes easily after blanching.
  2. Blanch the Tomatoes: Carefully place the scored tomatoes in a pot of boiling water for 2-3 minutes, until the skin starts to lift up where cut. Then remove from the pot and allow to cool for a minute to handle safely.
  3. Peel and Seed: Peel the skins off carefully with your fingers, then cut the tomatoes into quarters and remove the seeds to reduce excess moisture and bitterness in the spread.
  4. Make the Spread: In a food processor, combine the peeled and seeded tomatoes, shredded cheddar cheese, and chopped onion. Pulse until the mixture achieves a smooth and spreadable consistency. If too runny, add a bit more cheese to thicken, and adjust onion quantities for flavor as needed.
  5. Assemble the Sandwiches: Spread a thick layer of the tomato mixture onto four slices of bread. Top each with the remaining four bread slices to form sandwiches.
  6. Trim and Slice: Carefully cut the crusts off each sandwich. Then slice each sandwich into four small triangles or three rectangular finger sandwiches for elegant serving pieces.
  7. Serve: Arrange the tea sandwiches on a platter in a single layer and serve immediately to enjoy the fresh and flavorful taste.
