Ingredients

Meatloaf:

  • 2 lbs ground chicken
  • 1 cup panko bread crumbs
  • 1/2 cup grated Parmesan cheese

Garlic Butter Topping:

  • 3 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a loaf pan.
  2. Mix the meatloaf: In a large bowl, combine the ground chicken, panko bread crumbs, and Parmesan cheese until well mixed. Shape into a loaf and place in the prepared pan.
  3. Make the topping: In a small bowl, mix together the melted butter, minced garlic, and parsley. Spread over the top of the meatloaf.
  4. Bake: Bake in the preheated oven for 60-70 minutes, or until the internal temperature reaches 165°F (74°C).
