Pineapple Cowboy Candy is a delightful blend of sweet and spicy flavors that transforms juicy pineapple chunks into a delicious treat. This unique recipe combines fresh pineapple with a sticky, peppery syrup, making it the perfect topping for tacos, burgers, or just a tasty snack straight from the jar.

Ingredients

Fresh Pineapple:

  • 1 medium fresh pineapple, peeled and diced

For Syrup:

  • 1 1/2 cups granulated sugar
  • 3/4 cup apple cider vinegar
  • 1 1/2 tsp red pepper flakes (adjust to taste)
  • 1/2 tsp ground ginger

Instructions

  1. Prepare the Pineapple: Peel, core, and dice the fresh pineapple into small chunks.
  2. Create the Syrup: In a medium saucepan, combine sugar, vinegar, red pepper flakes, and ground ginger. Stir well and bring to a gentle boil over medium heat.
  3. Add Pineapple: Once boiling, add the pineapple chunks and reduce heat to low. Simmer for about 10 minutes, stirring occasionally.
  4. Cool and Store: Remove from heat and let cool for about 30 minutes. Optionally stir in fresh mint leaves. Transfer the mixture with the syrup into sterilized jars, seal tightly, and refrigerate for at least 24 hours before serving.
