This Best Mediterranean Chicken Zucchini Bake is a one-pan wonder that combines juicy, herb-marinated chicken with tender zucchini and bold Mediterranean spices. It’s easy, adaptable, and perfect for both weeknight meals and weekend gatherings.

Ingredients

Chicken:

  • 4 boneless, skinless chicken thighs

Zucchini:

  • 2 medium zucchinis, sliced into rounds

Marinade:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Garnish:

  • Fresh parsley for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the chicken: Pat chicken dry and trim any excess fat.
  3. Prepare the zucchini: Slice zucchini and toss with olive oil and a pinch of salt.
  4. Make the marinade: In a bowl, whisk together lemon juice, garlic, oregano, thyme, paprika, red pepper flakes, salt, and pepper.
  5. Marinate the chicken: Coat chicken with the marinade and let sit for 15–30 minutes.
  6. Layer the dish: Layer zucchini at the bottom of a greased baking dish.
  7. Add the chicken: Place chicken on top and drizzle remaining marinade over the dish.
  8. Bake: Bake uncovered for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  9. Rest and garnish: Remove from oven and let rest for 5–7 minutes. Garnish with fresh parsley and serve hot.
