Ingredients

Dough:

  • 2 cups warm water (474g)
  • 1 Tablespoon active dry yeast
  • 1/4 cup honey or sugar (85g honey, 50g sugar)
  • 2 teaspoons salt
  • 2 Tablespoons oil (30 ml)
  • 45 1/2 cups all-purpose or bread flour (500g-688g)

Instructions

  1. Prepare the dough: In a large bowl or stand mixer, combine yeast, water, and a pinch of sugar or honey. Let it rest until foamy. Add remaining sugar or honey, salt, oil, and 3 cups of flour. Mix well.
  2. Add flour: Gradually add more flour until the dough pulls away from the bowl. Knead for 4-5 minutes.
  3. First Rise: Place the dough in a greased bowl, cover, and let it rise until doubled in size.
  4. Shape and rise: Divide the dough, shape into loaves, and let rise again in pans.
  5. Bake: Preheat oven, bake the bread until golden brown. Cool, slice, and enjoy!

  • You can customize by adding nuts, seeds, or dried fruits to the dough.
  • For a richer flavor, substitute some of the water with milk.
