  • ½ cup diced onions
  • ¼ cup diced sundried tomatoes
  • 3 garlic cloves, minced

  • ¼ cup flour
  • 2 tablespoons tomato paste (optional)
  • 68 cups chicken broth
  • 6 oz pasta
  • 1 cup heavy whipping cream
  • ½1 cup grated parmesan reggiano cheese
  • 2 ½3 cups fresh spinach

Instructions

  1. Cook Chicken: Heat olive oil in a large soup pot or Dutch oven over medium-high heat. Add chicken, 1 teaspoon Italian Seasoning, salt, and pepper. Cook until browned.
  2. Add Vegetables: Add onions, carrots, celery, sundried tomatoes, and garlic. Cook until translucent.
  3. Add Flour and Broth: Sprinkle in flour, stir well. Gradually whisk in chicken broth, ensuring no lumps.
  4. Add Pasta: Bring to a boil, add pasta and seasoning. Simmer until chicken is cooked and pasta is al dente.
  5. Finish Soup: Stir in cream, spinach, and parmesan. Simmer for 5 minutes. Adjust seasoning.

Notes

  • I use 6 cups of broth for a thick cream sauce and texture. Add more later to thin out.
  • Tomato paste is optional for added flavor. Omit for a white soup.
  • Rotisserie chicken adds depth; add at the end to warm.
  • Be cautious of mushy pasta; cook separately if concerned.
  • When reheating, add broth to revive and thin out.
  • Flour thickens the soup; cream cheese can be a substitute.
  • Swap cream for half and half, milk, coconut milk, or cream cheese.
  • For slow cooker, cook all but pasta, cream, spinach, and parmesan on Low for 8 hours or High for 4 hours. Add remaining ingredients before serving.
