Ingredients

For the Peanut Sauce

  • ½ cup creamy peanut butter
  • 1 cup unsweetened, full-fat coconut milk (stirred well)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 1 ½ packed tablespoons brown sugar
  • 1 teaspoon ground ginger
  • 1 tablespoon minced fresh garlic
  • ½ teaspoon crushed red pepper flakes

For the Chicken

  • 2 pounds boneless, skinless chicken thighs (cut into chunks)

Serving Suggestions

  • cooked white or brown rice
  • 1 cup prepared peanut sauce

Instructions

  1. For the Peanut Sauce – Whisk all sauce ingredients together in a medium bowl.
  2. To Marinate the Chicken – Coat chicken in peanut sauce and refrigerate for at least 1 hour.
  3. To Broil the Chicken – Cook chicken under broiler until internal temperature reaches 160°F.
  4. To Grill the Chicken – Grill chicken over medium-high heat until internal temperature reaches 160°F.
  5. To Serve the Peanut Chicken – Plate chicken with rice, sauce, and garnishes.
