Thai Basil Beef Rolls

Spicy, sweet, tangy Thai‑inspired beef rolls wrapped in tortillas with fresh cucumber, cilantro, Thai basil, green onions and peanuts.

Ingredients

  •  lb ground beef (or chicken)
  • Black pepper (to taste)
  • 4 cloves garlic, chopped
  • 1 Tbsp fresh grated ginger
  • 13 tsp Chinese 5‑spice
  •  cup tamari or soy sauce
  • ¼ cup Thai chili sauce
  • ¼ cup chopped green onions
  • 4 Persian cucumbers, chopped
  • 2 cups cilantro, chopped
  • ½ cup Thai basil, chopped
  •  cup chopped roasted peanuts
  • 810 flour tortillas, warmed
  • Chili paste (for serving)
  • Toasted sesame oil (for serving)

Instructions

  1. In a large skillet over medium heat, cook beef with black pepper until browned, about 5 minutes, breaking it up.
  2. Add garlic, ginger and Chinese 5‑spice, cook 1 minute more.
  3. Pour in tamari and Thai chili sauce; simmer 3–5 minutes until sauce coats the meat. Stir in 2 Tbsp green onions, then remove from heat.
  4. Microwave tortillas 15 seconds each to warm.
  5. Assemble each roll by layering beef, cucumber, cilantro, basil, green onions and peanuts in the center of a tortilla.
  6. Fold sides and ends over filling, roll up snugly.
  7. Serve warm with extra tamari/soy sauce, chili paste and toasted sesame oil. Optionally serve with rice.

Notes

  • Homemade Sweet Thai Chili Sauce: mix ⅓ cup honey, 2 Tbsp ketchup, 1–2 Tbsp chili sauce, 2 tsp lime zest, 2 Tbsp lime juice, 1 Tbsp rice vinegar, 2 tsp tamari, 1 Tbsp grated ginger, 1 clove grated garlic; stir to combine.
  • Can substitute Italian basil if Thai basil unavailable.
  • Alternatively use chicken in place of beef.
  • To crisp tortillas, toast in a skillet before warming.
