These classic taquitos are fried to golden perfection and are perfect as appetizers or a main dish. Filled with a flavorful mixture of chicken, cheeses, and spinach, they are sure to be a hit with your family and friends.

Ingredients

For the Taquitos:

  • Vegetable or canola oil, for frying
  • 3 cups shredded cooked chicken
  • 6 ounces cream cheese, softened
  • 1½ cups baby spinach, stems removed and chopped
  • 1½ cups shredded Colby Jack cheese, or Mexican blend cheese
  • ½ cup salsa, store-bought or homemade
  • ⅓ cup sour cream
  • Salt and pepper to taste
  • 12 (6-inch) corn tortillas (or flour tortillas)

For Toppings:

  • Shredded lettuce
  • Chopped tomatoes
  • Sour cream
  • Pico de Gallo

Instructions

  1. Heat Oil: Fill a saucepan with ½ inch of oil and heat over medium heat to 350 degrees F.
  2. Prepare Filling: In a large bowl, mix together chicken, cream cheese, spinach, Colby Jack cheese, salsa, and sour cream. Season with salt and pepper.
  3. Fill and Fry: Spoon some chicken mixture onto a tortilla, roll it up, and fry in the hot oil until golden brown on both sides.
  4. Serve: Drain the taquitos on paper towels and serve warm with your favorite toppings.

Notes

  • Variations: Try using shredded beef or pork, or experiment with different salsas for unique flavors.
  • Make Ahead: The filling can be prepared up to 24 hours in advance and refrigerated until needed.
  • Prevent Cracking: To prevent corn tortillas from cracking, warm them in damp paper towels in the microwave before rolling.
