Ingredients

For the Donuts

  • 1 ½ Cups All Purpose Flour
  • ¼ Cup White Sugar
  • 2 Teaspoons Baking Powder
  • ½ Teaspoon Salt
  • 1 Teaspoon Cinnamon
  • 1 Egg
  • ½ Cup Milk
  • 2 Tablespoons Butter, Melted
  • 1 Pinch Nutmeg, Optional
  • Oil, for Deep Frying

For the Cream Cheese Filling

  • 1 Cup Powdered Sugar
  • ¼ Cup Cream Cheese, Softened
  • 1 Teaspoon Vanilla Extract
  • ¼ Cup Whole Milk

Instructions

  1. For the Donuts – In a large bowl, whisk together flour, sugar, cinnamon, salt, and baking powder. Stir in the egg, milk, and melted butter. Do not overmix.
  2. Heat oil to 375 degrees F in a cast iron pan. Drop batter using a generous teaspoon into the hot oil. Fry 5 or 6 at a time, ensuring not to overcrowd the pan.
  3. Fry for about 2-3 minutes or until golden brown, turning once. Drain on paper towels, then roll in cinnamon sugar.
  4. For the Cream Cheese Filling – In a large bowl, whip cream cheese and vanilla until smooth. Gradually add powdered sugar until just combined. Adjust consistency with milk as needed.
  5. Pour the cream cheese filling into a squirt bottle or piping bag. Fill the donuts generously with the glaze.

Notes

  • Flour: Measure your flour by spooning it into a measuring cup and leveling it off with a knife.
  • Baking Powder: Replace every 6-12 months for optimal rising.
  • Cinnamon: Cinnabon uses Makara cinnamon.
  • Milk: Use full-fat milk for richness.
  • Donut Size: Ensure uniform size using a small ice cream scoop.
  • Frying: Deep fry in a cast iron skillet for best results.
  • Batch Size: Fry only a few donuts at a time to prevent overcrowding.
  • Filling Consistency: Aim for a slightly thicker than glaze consistency for the cream cheese filling.
