These sweet potato pie bars are a delightful twist on the classic dessert. With a buttery graham cracker crust and a creamy sweet potato filling spiced with cinnamon, nutmeg, and ginger, these bars are a perfect treat for any occasion.

Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 2 cups mashed sweet potatoes (cooked and cooled)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup evaporated milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Crust: Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and brown sugar. Pour in the melted butter and mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a greased 9×13 inch baking pan to form an even crust. Bake for 8–10 minutes, or until lightly golden. Remove from the oven and let cool slightly.
  2. Make the Filling: In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix well until smooth and fully combined.
  3. Assemble the Bars: Pour the sweet potato filling over the cooled crust, spreading it evenly.
  4. Bake: Return the pan to the oven and bake for 30–35 minutes, or until the filling is set and a toothpick inserted into the center comes out clean.
  5. Cool and Serve: Allow the bars to cool in the pan on a wire rack. Once completely cooled, cut into squares or bars.
  6. Optional: Serve with whipped cream or a dusting of powdered sugar, if desired.
