Sweet Cranberry Jam is a delightful combination of fresh or frozen strawberries and cranberries, sweetened with sugar and spiced with cinnamon, ginger, allspice, and cloves. This jam is perfect for spreading on toast, pairing with cheese, or gifting to friends and family.

Ingredients

For the Jam:

  • 6 cups fresh or frozen strawberries (about 1 1/2 pounds)
  • 2 cups fresh or frozen cranberries (approximately 1/2 pound)
  • 5 cups sugar (around 2 1/2 pounds)
  • 2 sachets liquid fruit pectin (using 2 pouches of certo brand at 170ml each)
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cloves

Instructions

  1. Prepare the Fruit: Wash and hull the strawberries. Combine the strawberries and cranberries in a large saucepan.
  2. Cook the Fruit: Over medium heat, bring the fruit to a simmer, stirring occasionally. Cook until the fruit is softened, about 10-15 minutes.
  3. Add Sugar and Spices: Stir in the sugar, cinnamon, ginger, allspice, and cloves. Continue to cook, stirring frequently, until the sugar is completely dissolved.
  4. Finish the Jam: Increase the heat to high and bring the mixture to a full rolling boil. Add the liquid fruit pectin and boil for exactly 1 minute, stirring constantly.
  5. Can the Jam: Remove the jam from heat and skim off any foam. Ladle the hot jam into sterilized jars, leaving 1/4-inch headspace. Process the jars in a boiling water bath for 10 minutes.
  6. Cool and Store: Allow the jars to cool undisturbed. Check the seals after 24 hours, then store the jam in a cool, dark place.
