Ingredients

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 1 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil
  • 1/4 cup cornstarch
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Rice or noodles, for serving

Instructions

  1. Cut the chicken breasts into bite-sized pieces.
  2. In a mixing bowl, combine sweet chili sauce, soy sauce, minced garlic, and ginger. Add chicken and coat well. Marinate in the refrigerator for at least 30 minutes or up to 2 hours.
  3. Remove chicken from marinade, allowing excess to drip off. Dredge each piece in cornstarch seasoned with salt and pepper.
  4. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken in a single layer and cook for 4-5 minutes per side until golden brown and cooked through. Cook in batches if needed.
  5. Remove chicken and set aside. Pour remaining marinade into the skillet and simmer until it thickens slightly.
  6. Return chicken to the skillet and toss to coat evenly with sauce.
  7. Serve over steamed rice or noodles, garnished with green onions and sesame seeds.
