Ingredients

Dry Ingredients

  • 2 cups white granulated sugar
  • 2 tablespoons baking powder

Wet Ingredients

  • 2 large eggs
  • 2 cups milk
  • ⅔ cup vegetable oil

Instructions

  1. Prepare pans and oven: Grease 6 miniature loaf pans thoroughly and preheat your oven to 350℉ (175℃) to ensure even baking.
  2. Mix dry ingredients: In a medium mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined. Set this mixture aside for later.
  3. Combine wet ingredients: In a large mixing bowl or stand mixer fitted with the whisk attachment, beat the eggs, milk, and vegetable oil on low speed just until combined to avoid overmixing.
  4. Add dry to wet: Switch to the paddle attachment or use a spatula. Gradually add the dry ingredients to the wet mixture, mixing just until the batter is moistened and all ingredients are incorporated. Avoid overmixing to keep the bread tender.
  5. Fill pans: Pour the batter into the prepared loaf pans, filling each about an inch below the rim to allow room for the bread to rise. Optionally, sprinkle a little sugar on top of each loaf for a sweet crust.
  6. Bake: Place the pans in the center rack of the preheated oven and bake for approximately 40 minutes. Check doneness by inserting a toothpick into the center of the loaves; it should come out clean when done.
  7. Cool and serve: Remove from oven and allow the loaves to cool slightly in the pans before slicing. Serve warm or at room temperature for best flavor and texture.
