This Sweet & Spicy Pineapple Candy recipe combines juicy pineapple with a vibrant blend of sugar, apple cider vinegar, and warming spices to create an addictive treat with a perfect balance of sweet heat. Ideal as a unique snack or a flavorful topping, this candy is easy to make and packed with bold tropical and spicy flavors.

Ingredients

Main Ingredients

  • 1 medium fresh pineapple, peeled, cored, and diced (about 4 cups)
  • 1 1/2 cups granulated sugar
  • 3/4 cup apple cider vinegar
  • 1 1/2 teaspoons red pepper flakes
  • 1/2 teaspoon ground ginger

Optional Garnish

  • Fresh mint leaves, chopped

Instructions

  1. Prepare the Pineapple: Peel, core, and dice the fresh pineapple into approximately 4 cups of small chunks to ensure even cooking and that the pineapple pieces absorb the flavors well.
  2. Combine Ingredients: In a medium saucepan, mix the diced pineapple, granulated sugar, apple cider vinegar, red pepper flakes, and ground ginger. Stir the mixture to combine all ingredients thoroughly.
  3. Cook the Mixture: Place the saucepan over medium heat and bring the mixture to a gentle boil. Reduce the heat to low and simmer, stirring occasionally, until the mixture thickens into a sticky, candy-like consistency—this usually takes about 30-40 minutes. Be careful not to burn the mixture, and lower the heat as needed.
  4. Test the Consistency: To check if the candy is ready, place a small spoonful on a chilled plate and let it cool for a minute. If it firms up and can be handled without being too sticky or runny, it’s done.
  5. Cool and Garnish: Remove the saucepan from heat and let the pineapple candy cool to room temperature. Optionally, stir in some freshly chopped mint leaves for a refreshing contrast.
  6. Serve or Store: Serve the sweet & spicy pineapple candy as a snack or condiment. Store leftovers in an airtight container in the refrigerator for up to 1 week.

Notes

  • Use ripe, sweet pineapple for the best flavor and natural sweetness.
  • Adjust red pepper flakes to your preferred spice level; reduce for milder candy or increase for more heat.
  • If the mixture thickens too much, stir in a little water to loosen.
  • Fresh mint leaves add a refreshing touch but can be omitted if preferred.
  • Store in the refrigerator to maintain freshness and prevent spoilage.
