A hearty and flavorful Street Corn Chicken Chili that combines the smokiness of chili powder and paprika with the sweetness of corn, finished off with a creamy touch of sour cream and a hint of lime.

Ingredients

Aromatics & Vegetables:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 to 4 jalapeno peppers, seeds removed and diced
  • 6 to 8 ears corn on the cob, kernels cut from cob
  • Kosher salt and black pepper, to taste

Garlic, Chicken & Spices:

  • 6 to 8 cloves garlic, minced
  • 2 pounds ground chicken
  • 3 tablespoons chili powder
  • 2 tablespoons paprika
  • 1 tablespoon cumin

Liquids & Simmer:

  • 4 cups chicken broth
  • 1 tablespoon chicken base (such as Better Than Bouillon)
  • A few dashes hot sauce of choice

Finish & Toppings:

  • 1 cup sour cream
  • 1 cup chopped cilantro
  • 3 tablespoons lime juice
  • Optional toppings: more cilantro, crumbled cotija cheese, chili powder, lime wedges

Instructions

  1. Sauté Aromatics & Vegetables – In a large soup pot, sauté olive oil, onion, jalapenos, corn, salt, and pepper until softened.
  2. Add Garlic, Chicken & Spices – Stir in garlic, ground chicken, chili powder, paprika, cumin, and cook until chicken browns.
  3. Add Liquids & Simmer – Pour in broth, chicken base, simmer for 25-30 mins to thicken.
  4. Finish the Chili – Add hot sauce, sour cream, cilantro, lime juice, and cook until creamy.
  5. Serve – Ladle into bowls, garnish with toppings, and enjoy!

Notes

  • You can adjust the spice level by adding more or less chili powder and hot sauce.
  • For a vegetarian version, swap the chicken with plant-based protein like lentils or beans.
